Chicken Coleslaw Salad

Do you ever just feel like eating a salad, but don’t want a boring salad with lettuce and chicken? Well, here’s something I think you will enjoy.

This salad is not only low-carb, it’s filling and delicious!

Ingredients: (This will fill 3 adults as a meal, or 4 adults as a side)

-handful of grape tomatoes

-1/2 a green cabbage

-1/2 a purple cabbage

-chicken

-2 tbsp honey

-drizzle of apple cider vinegar

-garlic salt

-pepper

-shredded cheese

-garlic mayo

-olive oil

Directions: 

  1. First, cut the chicken into squares.
  2. Cook the chicken with olive oil, salt and pepper, and 1 tbsp of mayo. Cook on medium heat until ready.
  3. Meanwhile, cut your green and purple cabbage and place into a large salad bowl.
  4. Cut the grape tomatoes in half and add to the salad bowl.
  5. When the chicken cools down, add it into the large salad bowl.
  6. Add drizzle apple cider vinegar, 2 tbsp honey, and garlic salt, pepper, shredded cheese, and 2 tbsp mayo into large salad bowl.
  7. Mix all ingredients together.
  8. Cool salad for 1 hour before eating.

Mushroom and Bacon Egg Bites

These little egg bites are a perfect snack or holiday potluck idea! Not only are they easy to make, they are satisfying and filling.

Ingredients:

-butter

-diced onion

-6-8 eggs

-4-6 pieces of bacon

-2 large mushrooms

-garlic salt

-pepper

-2 tbsp mayo

Directions: 

Boil the Eggs

  1. Get a medium pot filled with water and turn on medium heat.
  2. Place 6-8 eggs into the pot.
  3. Once the eggs start to boil, cook them for 8 minutes.
  4. Turn off the heat and pour out the hot water.
  5. Immediately pour cold water and ice cubes into a large bowl and place the boiled eggs into the ice bath for 10 minutes.
  6. Carefully peel the eggs and wash them after each peel (just so no shells show up on the eggs)
  7. Cut each egg in half (hotdog style) and carefully scoop out the yoke.
  8. Place the cooked yoke into a mixture bowl.

Fry the Bacon 

  1. Preheat the oven to 350F (or use an air fryer)
  2. Set aside 4-6 pieces of bacon and place in the preheated oven (or air fryer) for 10-15 minutes.
  3. When the bacon is crispy, cut them into small pieces and place them into the egg mixture bowl.

Sauté the Mushrooms

  1. In a small saucepan, heat 1tbsp butter.
  2. Slice mushrooms and place into the heated saucepan.
  3. Grill the mushrooms and toss them into the egg mixture bowl (with all the juices)

Final Steps

  1. In the egg mixture bowl, throw in diced onion, 2 tbsp mayo, salt, and pepper.
  2. Mix all the ingredients together.
  3. Fill in the white egg shells with the egg, bacon, and mushroom mixture.
